Chablis (France)
Produced in the northernmost part of Burgundy, Chablis is known for its fresh acidity and minerality. The chalky Kimmeridgian clay soils give a distinctly “stony” and sometimes salty note. On the nose, young Chablis often shows green apple and citrus, while riper vintages tend toward ripe peach and almond. A classic accompaniment to oysters, shellfish and crustaceans, but also delicious with goat cheese.

Bourgogne Blanc (Côte de Beaune, France)
Slightly richer than Chablis, especially when the grapes come from villages such as Meursault, Puligny-Montrachet or Chassagne-Montrachet. Here, part of the wine is often aged in oak barrels (also known as 'barrel fermentation'), which provides creaminess, buttery notes and vanilla. On the nose you will find ripe pear, white flowers and a subtle hint of toast. Combines excellently with poultry in cream sauce, risotto or creamy fish dishes.

Sonoma Coast Chardonnay (California, USA)
In the cool, misty coastal region of Sonoma, Chardonnay develops a perfect balance between freshness and ripe fruit. Typical aromas are tropical fruits such as pineapple and mango, combined with apple and peach. Due to the modern vinification techniques - such as partial fermentation and maturation in new oak barrels - you can also taste notes of coconut, honey and light smoke. Delicious with grilled salmon, spit-roasted chicken or creamy pasta with mushrooms.

Margaret River Chardonnay (Western Australia)
Margaret River is one of Australia's coolest wine regions on the southwest coast, with a climate very similar to that of Burgundy. Chardonnays here are elegant, with a combination of citrus, stone fruit and a soft minerality. Barrel maturation is often done here too, but increasingly the influence of new oak is limited to finesse. Seafood with spicy Asian flavours, lobster and creamy cheeses are ideal partners.

Casablanca Valley Chardonnay (Chile)
Thanks to its proximity to the Pacific Ocean, Casablanca Valley is one of Chile's coolest wine regions, perfect for refined white wines. Chardonnays from this valley are bright and vital, with aromas of green apple, lime and a hint of white flowers. Often fermented lightly or not at all in oak, to preserve the pure fruit expression. Delicious with ceviche, light salads or Asian fish dishes where fresh herbs are central.
